The people and purpose behind the food
Little Wing Apiary is a Lowcountry apiary and bee-breeding operation led by Dr. Timothy Liptak. The apiary produces Lowcountry wildflower honey from its regional hives along with comb honey, pollen and beeswax when available.
Dr. Tim's path into beekeeping began after watching a honey-bee colony swarm from an old oak, eventually leading to Master Beekeeper credentials and graduate study in entomology. Families can buy through the apiary's online shop. Farm Allegiance verifies specialty honey varieties individually before calling them Lowcountry-produced because not every varietal SKU should be assumed to come from the apiary's local hives.
